To keep them fresh for up to 14 days:
1. Carefully wrap the fresh truffle in absorbent paper
2. Place in a dry container such as a tupper or glass jar
3. Keep the container in the highest part of the refrigerator, so as to avoid the cooler air.
4. Open the container every two days, so that the truffle can breathe and change the absorbent paper if it is moist. The truffle should be kept dry.
STORING FRESH TRUFFLES WITH EGGS
Place them, in the fridge, in a large sealed jar for 2 to 3 days with the eggs of your choice.. This will infuse the yolk with the aroma of the truffle
STORE FRESH TRUFFLES WITH RICE
This type of storage is a little bit controverial.
The rice makes the truffle loose its weight and shelf life a little bit more quicker.
But some chef store the truffles in a fridge with in a large jar sealed for 2 to 3 days with rice. The aroma and flavor of the fresh truffle infuses the rice and makes it the ideal to cook with any dish.
Others just prefer to keep the truffle stored in fresh, without rice, and save it to give the final touch with laminated truffle to its rice dish.
As usual there are no absolute answers in the truffle world.
